Moooove over Skinny Cow Treats, these pumpkin desserts will knock your socks off!!! At my last WW meeting I got a pumpkin mousse recipe and had to come home and try it, OMG FABULOUS!!! But why stop there, of course I had to figure everything else I could do with it ...
how about pumpkin ice cream sandwiches - 2 points ea or a pumpkin ginger snap parfait - 3 points or just the plain pumpkin mousse - 1.5 points per cup ... I have been doing Weight Watchers since Sept 9th and am now down 15.3 lbs, WOOOHOO!!!
But I needed something sweet, non carb related and tasty ... all of these fit the bill!!
Pumpkin Mousse- 15 ounces canned pumpkin
- 1 (3 1/2 ounce) boxes fat-free sugar-free instant vanilla pudding mix
- 2 cups skim milk
- 1 teaspoon pumpkin pie spice
- 1 - 8oz tub fat-free whipped topping
FOR MOUSSE: fold in the tub of whipped topping
FOR FROZEN TREATS: Place 1/4 cup of the pumpkin mousse on 1 graham cracker square, spread evenly, top with the other graham cracker square and press slightly. Freeze for 20 minutes, ENJOY!!! If you make up a bunch for later, let sit out for 15 minutes before eating, they freeze pretty solid.
FOR PARFAIT: Take 1/2 of mixture set aside, fold in 1/2 of the tub of whipped topping to the remaining mix. In a glass spoon in 1/2 cup pumpkin pudding mixture, 2 crushed ginger snaps, top with 1/2 cup of pumpkin mousse
The pumpkin Mousse would also make a great frosting for the
WW 2 Point Pumpkin Muffins - Makes 24 muffins
1 box Spice Cake Mix
15 ounce can pumpkin
1 cup water
Mix all ingredient together in mixer. Cook for 20- 25 minutes at 350. Let cool completely. Frost with 1/4 cup Pumpkin Mousse per muffin ...
You could also use this as a Pumpkin Pie WW Style -
1/5 of the pie with 1/4 c whipped topping = 3 points
1 recipe of the Pumpkin Pudding (do not add the whip topping)
FREE Whipped Topping
Mix up the Pumpkin Pudding, spread into the graham cracker crust, top with whipped topping.
Pumpkin is my sweet new BFF!!!
