Sorry I missed yesterday, I know I promised but I was SO TIRED after cooking at Lang's Horse & Pony Farm Horse Camp last week right in the middle of record setting heat here in Washington! Last Wed it was 120 in the kitchen and I thought I was going to melt ... I really like cooking for the girls and they sure can put away some food, let me tell you!!!
So what's on the menu at a horse camp you ask?? We have French toast with fresh strawberries and whipped cream, sausage patties, OJ & hot chocolate or pancakes, bacon, fresh fruit we even have English Muffin sandwiches all made from scratch by moi! Lunch is Mac n Cheese or Burgers and tots or Hot dogs and dinner is anything from soft tacos to a baked potato bar!!! I never had camp food like this when I went!!! The kitchen is rustic and you really need to be organized and improvise but it was fun and everyone ate!
I am cooking this week for the last overnight camp, my daughter is in this one so it will be nice to see her. This is the first time she has been away from home and Mom is going through withdrawals :) Of course I am sure she hasn't thought a thing about home, not when she is on a horse all day ... a girl after my own heart!
