After months of watching all the daring bakers, I finally decided to join in the fun!! August was a challenge hosted by Meeta of What's for Lunch Honey? and Tony of Olive Juice. Meeta and Tony chose Chocolate Éclairs from the book Chocolate Desserts by Pierre Hermé, written by baker, Dorie Greenspan. To say this was a bit intimidating was an understatement especially after looking at previous months work by a lot of these bakers. But I forged ahead!
We are allowed to change some things but have to follow the rules for the rest. One rule we could change was the filling, so I made an Orange Marmalade Pastry filling. It turned out SO GOOD!!! Unfortunatly I did it on the fly and didn't write the recipe down, so, OH DARN, much to the dismay of my tasters, I will have to make these again :) Don't let the recipe fool you tho, they are really not that hard to make. Orange marmalade pastry cream sounds really interesting and light. Chocolate and orange work so well together too. Good mix!

Those eclairs look so professionally done... and that orange-marmalade pastry cream filling sounds divine. Hahaha, that's the problem with improvising with a recipe, you tend to forget what you've put in it. But I'm sure you'll be able to remember how you made the filling, after all... you are a Daring Baker :)
